I play in an extremely deep league. 10 teams, 10 starters (no K's) and 12 bench so pickings on the WA is slim at best.

I have the #1 WA spot. Wondering if I should take a flyer on Da'Rel Scott or hold onto that spot on the slight off chance that someone else emerges later in the season?

I wouldn't waste the pick, but I would continue to watch him. It also depends on how badly you need another RB. Just one game in I am not sold on Scott shouldering the load. He did turn in a good performance, but who knows what happens next week. The Giants could be in the market for an unsigned veteran, who knows...
